Yeah, despite Stephenie Meyer's best efforts to rationalize the science of the vampire, I don't think she'll be winning a Nobel Prize anytime soon.
One way to make vampirism remotely plausible would be to treat it like a virus. However, instead of killing the host cell like many viruses do, the vampire virus leaves the cell intact (while still producing copies of itself) and modifies the cell's DNA, thereby enhancing the cell's (and the whole organism's) performance. And, like HIV, transmission of the virus need not occur through saliva or skin contact. But, unlike HIV, the virus might not reside in seminal fluid -- just in the blood.
Yup. Stephenie Meyer's model precludes physiologic action in general, unless we're assuming supernatural forces, at which point it's all arbitrary make-believe anyway.
